cake batter cereal treats

So, I was recently faced with a sort of conundrum. I wanted to make something sweet for my birthday, but pretty cakes and cupcakes made from scratch usually take quite a while. I was looking for something a little speedier but still with that birthday pizzazz. Well, what I’m about to show you captures the essence of the super-fun birthday spirit but can be made in a cool half hour. Oh man, and this recipe is a perfect rice crispy confection. I found this little gem whipped up by the gals over at Give Me Some Oven, made a few tiny tweaks, and went straight to gooey, marshmallow heaven.

All you need to taste this perfection is:

  • 4 Tbsp butter
  • 1 10 oz. bag mini marshmallows
  • 1/2 cup funfetti cake mix
  • 5 cups cereal (I used regular rice krispies and cocoa puffs)
  • Sprinkles (I just kept adding them until I was happy… then added more on top)

Melt butter in large pot over medium heat. The larger pot is especially necessary if you’re working with bigger cereal like the cocoa puffs. Once the butter is melted, turn down the heat and add marshmallows. Stir continuously with a spatula until the mixture is almost completely melted. Quickly, whisk in cake mix. (Feel free to give your whisk a quick spritz of non-stick cooking spray to keep your marshmallow-y goodness in the pot, not stuck to your whisk. Dump in the cereal and stir until thoroughly coated. Add in sprinkles lastly, making sure not to over mix so the color doesn’t melt into the treats! Press into a 9X13 pan coated in non-stick spray and let sit for 30 minutes. I also coated my spatula in non-stick spray to press the treat mix into the pan quickly. Why work harder right?

One note I would have about cereals with larger pieces is they will be a little bit dryer than regular rice krispies because they don’t mush together as much the original does, but they are still delicious. Next time, I’ll try it with cocoa krispies, but they were out when I was grabbing ingredients this week.

No matter, they were still delicious and as of today, two whole batches are largely gone. Most went to work and didn’t survive through lunch, the rest have been at the apartment where Josh and I haven’t been shy about enjoying them!
